Bake time: 8–10 minutes

Ingredients:

  • 1 cup Peanut Butter (Creamy works best for texture; if using "natural" oil-separation styles, make sure it is very well-stirred.)

  • 1 cup Granulated Sugar

  • 1 large Egg

Instructions:

  1. Preheat & Prep: Heat your oven to 180°C (350°F). Line a large baking sheet with parchment paper or a silicone mat.

  2. Mix: In a medium bowl, stir the peanut butter, sugar, and egg together until the mixture is smooth and completely combined. The dough will feel a bit stiff—that’s normal!

  3. Roll: Scoop about 1 tablespoon of dough at a time and roll it into a ball (roughly 1 inch in diameter). Place them on the baking sheet about 2 inches apart.

  4. The Pattern: Use a fork to press a "crisscross" pattern into the top of each ball. This flattens them slightly so they bake evenly.

  5. Bake: Bake for 8 to 10 minutes. The edges should look slightly golden, but the centers will still look a bit soft.

  6. Cool: Let them sit on the baking sheet for at least 5–10 minutes before moving them. Since there is no flour, they need that cooling time to "set" and become firm.

Tips:

  • Texture Note: These cookies are chewy and slightly crumbly. Don’t overbake them, or they’ll turn into peanut butter "bricks"!

  • Salt: If you're using unsalted peanut butter, a pinch of salt in the dough makes a massive difference in flavor.
