Easy Chickpea Stir-fry

Ingredients:

  • 1 can chickpeas (drained and rinsed)

  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots)

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

  • 1 clove garlic (minced)

  • Cooked rice or quinoa

Instructions:

  1. Heat sesame oil in a skillet over medium heat.

  2. Add garlic and mixed vegetables; sauté until tender.

  3. Stir in chickpeas and soy sauce; cook for another 5 minutes.

  4. Serve over cooked rice or quinoa.
