Ingredients:
1 can chickpeas (drained and rinsed)
2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots)
2 tablespoons soy sauce
1 tablespoon sesame oil
1 clove garlic (minced)
Cooked rice or quinoa
Instructions:
Heat sesame oil in a skillet over medium heat.
Add garlic and mixed vegetables; sauté until tender.
Stir in chickpeas and soy sauce; cook for another 5 minutes.
Serve over cooked rice or quinoa.
