Ingredients:

  • 1.5–2 lbs chicken breast (about 3–4 large breasts)

  • 3 bell peppers, sliced (mix colors if you can)

  • 1 large onion, sliced

  • 1 packet fajita seasoning (or 2 tbsp homemade)

  • 2 tbsp olive oil

  • Juice of 1 lime

  • Salt & pepper (optional)

For serving (optional but recommended):

  • Tortillas

  • Sour cream or Greek yogurt

  • Avocado or guacamole

  • Shredded cheese

  • Salsa

Instructions:

  • Preheat oven to 400°F

  • Slice chicken into strips (or leave whole and shred after cooking)

  • Add chicken, peppers, and onion to a large baking dish or sheet pan

  • Drizzle with olive oil + lime juice

  • Sprinkle seasoning over everything

  • Toss well to coat evenly

  • Spread into an even layer

  • Bake for 25–30 minutes, stirring halfway through

Tips to Make It Really Good

  • Don’t overcrowd the pan → use a large sheet pan so veggies roast instead of steam

  • Want a little char? → Broil for 2–3 minutes at the end

  • Like it juicy? → Use a baking dish instead of a sheet pan

How to Serve (Serves 4)

  • Stuff into tortillas

  • Or make fajita bowls with rice or lettuce

  • Top with whatever you like (this part makes it feel like takeout at home)
