Easy Ground Beef Stroganoff

An easy and comforting ground beef stroganoff with creamy sour cream sauce, served over egg noodles for a quick and delicious weeknight dinner.

Ingredients:

  • 1 lb ground beef

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 cup beef broth

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon paprika

  • 1 cup sour cream

  • 2 tablespoons all-purpose flour

  • Salt and pepper to taste

  • 8 oz egg noodles (or pasta of choice)

  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Cook the pasta:

    • Cook the egg noodles according to package instructions. Drain and set aside.

  2. Brown the ground beef:

    • In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked, about 5-7 minutes. Drain any excess fat.

  3. Sauté the onions and garlic:

    • Add the chopped onion to the skillet with the cooked beef and sauté for about 2-3 minutes until the onions are softened.

    • Add the minced garlic and cook for another minute, stirring constantly.

  4. Create the sauce:

    • Sprinkle the flour over the beef mixture and stir well to coat. This will help thicken the sauce.

    • Gradually pour in the beef broth while stirring, ensuring there are no lumps. Add the Worcestershire sauce, Dijon mustard, and paprika. Stir to combine.

    • Bring the mixture to a simmer and let it cook for about 5 minutes, or until the sauce has thickened.

  5. Finish the stroganoff

    • Reduce the heat to low and stir in the sour cream until fully incorporated. Cook for another 2-3 minutes, until heated through. Season with salt and pepper to taste.

  6. Serve:

    • Serve the beef stroganoff over the cooked egg noodles. Garnish with chopped fresh parsley if desired.
