Ingredients:
3 cups shredded rotisserie chicken (skin removed)
1 cup BBQ sauce (store-bought or homemade)
¼ cup chicken broth or water (to keep moist)
1 tbsp apple cider vinegar (for tang)
1 tbsp brown sugar (optional, for sweetness)
½ tsp garlic powder
½ tsp onion powder
½ tsp smoked paprika (for depth)
Salt & pepper to taste
1 tbsp butter or olive oil (optional, for richness)
Instructions:
Shred the Chicken: Remove skin and shred the rotisserie chicken with forks or your hands or buy pre-shredded rotisserie chicken ready to eat.
Simmer the Sauce: In a medium saucepan or skillet, combine BBQ sauce, chicken broth, apple cider vinegar, brown sugar, garlic powder, onion powder, smoked paprika, salt, and pepper. Heat over medium-low for 2–3 min. until warm.
Add Chicken: Stir in the shredded chicken and butter (if using). Cook for 5–7 mins, stirring occasionally, until heated through and well-coated.
Adjust & Serve: Taste and add more BBQ sauce, vinegar, or spices if needed. Serve warm!
Serving Ideas:
Sandwiches: Pile onto brioche buns with coleslaw.
Tacos/Nachos: Use as a filling with cheese, pickles, and ranch.
Loaded Fries: Top fries with BBQ chicken, cheese, and jalapeños.
Pizza: Spread on flatbread with red onions and mozzarella.
Quick Tip: For extra smokiness, add a dash of liquid smoke or chipotle powder.
