Ingredients:
For the Chicken:
2 boneless, skinless chicken breasts (or thighs), diced
2 tbsp soy sauce
2 tbsp honey
1 tbsp rice vinegar (or apple cider vinegar)
2 cloves garlic, minced
1 tsp ginger, grated
1 tbsp sesame oil (or olive oil)
½ tsp black pepper
1 tsp cornstarch (optional, for thickening)
For the Rice Bowl:
1 cup white or brown rice, cooked
1 cup steamed broccoli or snap peas
1 carrot, julienned or shredded & steamed
1 tbsp sesame seeds (optional)
1 green onion, sliced
Instructions:
Marinate the Chicken: In a bowl, mix soy sauce, honey, vinegar, garlic, ginger, and black pepper. Add diced chicken and marinate for at least 15 minutes (or up to 1 hour for more flavor).
Cook the Chicken: Heat sesame oil in a pan over medium-high heat. Add chicken (reserve marinade) and cook for 5-6 minutes until browned.
Pour in the remaining marinade and simmer for 3-4 minutes until the sauce thickens slightly (add cornstarch mixed with water if needed).
Assemble the Bowl: Fill a bowl with cooked rice, top with honey soy chicken, steamed broccoli and carrots, and garnish with sesame seeds and green onions.
Serve & Enjoy!
Drizzle extra sauce over the bowl if desired.
