Honey Soy Chicken & Rice Bowl

A quick, flavorful meal with tender chicken glazed in sweet and savory honey soy sauce, served over steamed rice with crisp veggies.

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts (or thighs), diced

  • 2 tbsp soy sauce

  • 2 tbsp honey

  • 1 tbsp rice vinegar (or apple cider vinegar)

  • 2 cloves garlic, minced

  • 1 tsp ginger, grated

  • 1 tbsp sesame oil (or olive oil)

  • ½ tsp black pepper

  • 1 tsp cornstarch (optional, for thickening)

For the Rice Bowl:

  • 1 cup white or brown rice, cooked

  • 1 cup steamed broccoli or snap peas

  • 1 carrot, julienned or shredded & steamed

  • 1 tbsp sesame seeds (optional)

  • 1 green onion, sliced

Instructions:

  1. Marinate the Chicken: In a bowl, mix soy sauce, honey, vinegar, garlic, ginger, and black pepper. Add diced chicken and marinate for at least 15 minutes (or up to 1 hour for more flavor).

  2. Cook the Chicken: Heat sesame oil in a pan over medium-high heat. Add chicken (reserve marinade) and cook for 5-6 minutes until browned.

  3. Pour in the remaining marinade and simmer for 3-4 minutes until the sauce thickens slightly (add cornstarch mixed with water if needed).

  4. Assemble the Bowl: Fill a bowl with cooked rice, top with honey soy chicken, steamed broccoli and carrots, and garnish with sesame seeds and green onions.

  5. Serve & Enjoy!

  6. Drizzle extra sauce over the bowl if desired.
