Quick & Easy Chicken Fried Rice Recipe (Ready in 20 Minutes!)
This simple Chicken Fried Rice recipe uses pre-cooked rice, rotisserie chicken, and frozen veggies for a flavorful, customizable meal. Perfect for busy weeknights!

Ingredients
2 cups pre-cooked and cooled rice (leftover rice works best)
1 cup pre-cooked chicken (rotisserie chicken or leftovers)
2 tablespoons vegetable oil (or sesame oil)
2 eggs, lightly beaten
1/2 cup frozen mixed vegetables (peas, carrots, corn – no chopping needed!)
2 cloves garlic, minced (or 1/2 teaspoon garlic powder for even faster prep)
3 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1 teaspoon sesame oil (optional, for flavor)
Green onions, chopped (for garnish)
For extra flavor, add a pinch of white pepper or a dash of chili sauce.
Instructions
Prep Ahead: If using freshly cooked rice, spread it out on a plate and let it cool for 5 minutes while you prep other ingredients. Dice or shred the pre-cooked chicken. Lightly beat the eggs in a small bowl.
Cook the Eggs: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until cooked. Remove and set aside.
Stir-Fry Vegetables and Chicken: In the same pan, add the remaining 1 tablespoon of oil. Add the minced garlic and frozen mixed vegetables. Stir-fry for 2-3 minutes until heated through. Add the cooked chicken and stir to combine.
Add Rice and Season: Add the cooled rice to the pan, breaking up any clumps with a spatula. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir well to combine.
Combine Everything: Return the scrambled eggs to the pan and mix everything together. Cook for another 1-2 minutes, stirring constantly.
Garnish and Serve: Remove from heat, garnish with chopped green onions, and serve immediately.
Time-Saving Tips:
Use Pre-Cooked Ingredients: Leftover rice and pre-cooked chicken (like rotisserie chicken) save a ton of time.
Frozen Vegetables: Skip chopping fresh veggies and use frozen mixed vegetables instead.
Minimize Prep: Use pre-minced garlic or garlic powder to save time on chopping.
High Heat: Cook everything on medium-high heat to speed up the process.
