Quick and Healthy Chicken Frittata
A savory and fluffy chicken frittata with fresh veggies, cheese, and a golden brown top, perfect for a nutritious breakfast or dinner.


Ingredients:
2 chicken breasts (cooked and shredded or diced)
6 large eggs
1/2 cup milk (or any non-dairy milk)
1/2 cup shredded cheese (cheddar, mozzarella, or your preference)
1/2 onion, finely chopped
1/2 bell pepper, chopped (optional)
1 cup fresh spinach, chopped (optional)
1/2 teaspoon garlic powder
Salt and pepper to taste
Olive oil for cooking
Instructions:
Preheat the oven:
Preheat your oven to 375°F (190°C).Cook the vegetables:
In an oven-safe skillet (preferably cast iron), heat a tablespoon of olive oil over medium heat.Add the chopped onion and bell pepper (if using) and sauté for about 5 minutes, until they are soft and slightly caramelized.
Add the chopped spinach (if using) and sauté for another 2 minutes until wilted. Remove from heat.
Prepare the egg mixture:
In a bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined.Stir in the shredded chicken and cheese.
Combine everything:
Pour the egg mixture over the cooked vegetables in the skillet. Stir gently to distribute the chicken and vegetables evenly in the pan.Cook on the stove:
Place the skillet back over medium-low heat. Let the mixture cook undisturbed for about 5 minutes or until the edges start to set.Transfer to the oven:
Transfer the skillet to the preheated oven and bake for about 10-15 minutes or until the frittata is fully set and slightly golden on top. A toothpick inserted in the center should come out clean.Serve:
Remove from the oven and let it cool slightly before slicing. Serve warm, garnished with fresh herbs if desired.
